Mini cheese balls made from goat cheese, honey, cranberries, and pistachios! A quick and simple appetizer or party snack!
A few weeks ago, we bought a 2 lb. brick of Havarti cheese at the club and finished it in a matter of days. S.O. just breaks off massive hunks and stuffs them in his mouth, whereas I was slapping it on absolutely everything. I was especially loving it on top of those limited edition cranberry English muffins, toasted. The combination of the tart but sweetened cranberries with the tangy and creamy cheese was sublime. Grown-up grilled cheese, but open-faced… because you get more cheese that way. Everything is better with more cheese, obviously.
Havarti is my favorite cheese, tied with goat cheese. I love them both equally. Don’t make me choose. Those English muffins smothered in melty Havarti somehow spawned the idea for these mini goat cheese balls. I don’t know exactly how we got from there to here, but the particularly strong obsession and love affair I had with Havarti that week just got me thinking about my other favorite cheeses. Weird, I know – but it was simply my thought process! And I got it in my head that I wanted to put together goat cheese and cranberries.
Then I remembered Jessica’s bacon and red pepper goat cheese truffles, which are nothing short of brilliant. Mini cheese balls, basically! I love that idea.
That was that. I decided to make these Cranberry and Pistachio Goat Cheese Truffles. Goat cheese and cranberries belong together. To be fair, goat cheese belongs with a lot of things, but near the top of that list is cranberries. I mixed in a little bit of honey for extra sweetness, and pistachios to cut through with salty and nutty flavors, and then garlic for spice and edge. They were addictive.
I hid them in the back of the fridge and didn’t tell S.O. about them. He didn’t eat a single one, and I’m pretty sure he never even knew they were there. Is that mean? Sometimes I have to hide stuff from him or I don’t get any. He’s too quick and metabolic. Haha. If he knew, he probably had no clue what they were and wasn’t in an experimenting mood! 🙂 He missed out though because these were fabulous.
Serve these with crackers for a fantastic party appetizer. If you’re planning a New Year’s Eve get-together, these are an excellent option! Guests don’t have to worry about fussing with a large cheese ball that always ends up messy. These are mess-free and pre-portioned. They only take about 10 minutes altogether since you pretty much toss everything into a bowl, mix, and then roll into balls. Super easy and quick!

Cranberry and Pistachio Goat Cheese Truffles
Mini goat cheese balls with cranberries and pistachios.

Recipe type: Appetizer
Serves: 14-16 mini cheese balls
- 8 oz. goat cheese, softened
- 2 tbsp. honey
- ½ c. dried cranberries, finely diced
- pinch of garlic powder
- pinch of pepper
- ⅔ c. pistachios, finely chopped, divided
- In a small bowl, mix together goat cheese, honey, cranberries, garlic powder, pepper, and ⅓ c. pistachios.
- Roll into 1-inch balls. If the cheese is too soft, you can refrigerate it to firm it up for easier rolling.
- Roll the balls into the remaining ⅓ c. pistachios to coat.
- Serve with crackers. Enjoy!
