Heeeey! It’s the weekend, at long last. TGIF! I hope everyone has wonderful plans for the long holiday weekend. It’s been a crazy week in my neck of the woods, and I’m thrilled that it’s Friday. We’re heading out to the beach for a few days, and the forecast looks perfect. I’m excited.
Sometimes I find that short weeks just make the rest of the week more crammed, and I must say, my calendar for next week looks pretty insane with Monday off…. but I’ll worry about that on Tuesday.

One place I’ve been slacking is breakfast and brunch. Let’s remedy that. I found two recipes for homemade breakfast sausage in the course of a week while I was flipping through magazines, and it was funny to me that I found two recipes for it when it never occurred to me that such a recipe existed in the first place. You can make your own breakfast sausage — did you know that?? I think maybe I knew on some level, but I’d never tried it.
We made both those recipes, and then we took the elements that we liked from each, and mashed them into this preferred Homemade Breakfast Sausage Recipe.
I am weird about sausage, so making it ‘from-scratch’ is right up my alley. And now that we know how easy and simple it is to make – like, easier than meatloaf, and we can all agree that meatloaf is a breeze – now we are making it all the time. It’s so good and authentic.
You can make turkey, chicken, or pork breakfast sausage, or some combination thereof. Mix in a few herbs and spices, and you’re good to go. It’s insanely easy. My personal favorite is chicken sausage!
When we finally nailed down this Homemade Breakfast Sausage Recipe with the ingredients exactly how we wanted, we made sooo much of it. A bunch of double batches. Admittedly, I got a little burned out after eating dozens of patties.
This was a few weeks ago now, and I’m definitely no longer burned out on homemade breakfast sausage. In fact, it’s all I can think about at the moment, so I may have to send my S.O. out to the store. I bought blueberries for pancakes tomorrow, so breakfast sausage will round out our brunch perfectly!
- 2 lbs. lean ground chicken, turkey, or pork (we mostly use chicken)
- 2 tbsp. chopped fresh sage leaves
- 2 tbsp. chopped fresh thyme (remove pods and leaves from stem first, discard stems, then chop the remaining pods and leaves)
- 2 tbsp. fennel seed
- 1 tsp. salt
- ½ tsp. pepper
- ¼ c. maple syrup
- 2 tbsp. butter or olive oil, divided
- In a large bowl, combine meat, sage, thyme, fennel seed, salt, pepper, and maple syrup.
- Stir until blended.
- Shape into 3-inch patties, about ½-inch thick.
- In a large skillet over medium heat, melt 1 tbsp. butter.
- Add patties to the pan, cook for about 3 minutes on each side, or until crispy and brown, and repeat with remaining patties.
- Serve hot with breakfast!
