Good morning! I’m writing this Simple & Easy Blueberry Compote Recipe (hi Google!) post on Sunday, and I was getting a lot of other blog admin stuff done while I had YouTube videos playing in the background. Sometimes I can’t multi-task like that because I need to think, so the videos are a big distraction, but I was doing some mindless stuff, and I could run them in the background.
YouTube has almost replaced tv for me. My S.O. was recently out of town for an entire week, and I realized that I didn’t turn the tv on once. Of course, I couldn’t watch some of our shows without him, but still.
I like to watch a few cooking channels and cake decorating channels, but I also watch a bunch of beauty YouTubers too. I don’t know why it’s addictive to watch makeup tutorials and to find out what new products are coming out, but it really is… if you’re into that sort of thing.
I discovered a new channel a few weeks ago, Bella Fiori, and she mostly posts about beauty, but I also kept noticing that she had a a whole playlist of videos on unsolved murders and mysterious disappearances. I was like… what are these??? These were so incongruent with the rest of her channel!
I ignored that whole playlist, but then one auto-played after I finished up another video, and after a few minutes of listening, I was immediately hooked. Bella is studying criminology in school, and she’s just fascinated by all things serial killer and unsolved murder, etc. Macabre as it is, I totally share that fascination. I find it really intriguing that people can vanish without a trace, or that murders remain unsolved. How??
She researches everything about the incident, and she recaps the key facts, and then talks about the different theories.
Anyway, sorry if you came here for food, and instead I’m going on about a pretty morbid topic, but if you like murder mysteries, the series is totally engrossing. I watched all 20+ videos in her playlist over a 12-hour period, and her latest in the Mystery Mondays series comes out on Sundays if you’re in the US! That was the whole point of this rant. I’m excited that it’s Sunday, and the newest in her series will post tonight. It’s the little things to get excited about in life, people.

Now that I’ve got this blueberry compote recipe in my back pocket, I will use it to top EVERYTHING.
This would be a dream over oatmeal, cheesecake, angel food cake, waffles… anything. I’m making this Lemon Blueberry Bundt Cake with Lemon Glaze again soon, and I’ll probably have this blueberry compote on the side. I’m thinking it would also be delicious over this Lemon Poppy Seed Loaf, these Lemon Almond Ricotta Muffins, or these Blueberry Zucchini Bread Pancakes.
But seriously, this Blueberry Compote Recipe is absurdly simple to make, and once you have it on hand, you can put it on anything!
- 3 c. frozen blueberries, divided
- 3 tbsp. water
- ½ c. sugar
- 1 tbsp. lemon juice
- Combine 1½ c. blueberries, water, sugar, and lemon juice in a large saucepan over medium heat.
- Cook for 10 minutes, stirring occasionally.
- Add remaining blueberries, and cook for an additional 10 minutes, stirring occasionally.
- Allow to cool - it will thicken as it cools.
- Store in a sealed container in the refrigerator.
