Red Velvet Funfetti Protein Bars

Red velvet protein bars with a bunch of birthday cake sprinkles for a funfetti effect!

Ingredients

  • 1 c. oat flour
  • 1/2 c. chocolate protein powder I use Trutein brand, and they make a Red Velvet Cake protein powder that is perfect for this recipe
  • 1/2 c. granulated sugar or Xylitol for lower sugar option
  • 1/2 tsp. baking soda
  • 3 tbsp. cocoa powder
  • 3/4 c. small curd low-fat cottage cheese
  • 4 egg whites
  • 1/4 c. unsweetened almond milk
  • 4-5 drops red food color optional
  • 1/3 c. sprinkles
  • 1/4 c. mini semi-sweet chocolate chips

Instructions

  • In a large bowl, whisk together oat flour, chocolate protein powder, sugar, baking soda, and cocoa powder.
  • In another large bowl, whisk together cottage cheese, egg whites, almond milk, and red food color (if desired).
  • Add the wet ingredients to the dry ingredients, and stir until just combined.
  • Fold in the sprinkles and chocolate chips.
  • Pour batter into a greased 8-inch square pan.
  • Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted near the center comes out clean.
  • Cool completely. Cut into bars.

Notes

These freeze well, so you can keep the freezer stocked for emergency snacks.
