Ingredients

oat flour
1/2
c.
chocolate protein powder
I use Trutein brand, and they make a Red Velvet Cake protein powder that is perfect for this recipe

c.
granulated sugar or Xylitol
for lower sugar option
1/2
tsp.
baking soda
3
tbsp.
cocoa powder
3/4
c.
small curd low-fat cottage cheese
4
egg whites
1/4
c.
unsweetened almond milk
4-5
drops red food color
optional
1/3
c.
sprinkles
1/4
c.
mini semi-sweet chocolate chips
Instructions
In a large bowl, whisk together oat flour, chocolate protein powder, sugar, baking soda, and cocoa powder.
In another large bowl, whisk together cottage cheese, egg whites, almond milk, and red food color (if desired).
Add the wet ingredients to the dry ingredients, and stir until just combined.
Fold in the sprinkles and chocolate chips.
Pour batter into a greased 8-inch square pan.
Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted near the center comes out clean.
Cool completely. Cut into bars.
Notes
These freeze well, so you can keep the freezer stocked for emergency snacks.
