German Chocolate Brownies

Fudgy, chocolate chunk brownies with a generous layer of coconut-pecan frosting!

Ingredients

Brownies:

  • 1 box brownie mix with chocolate chunks
  • 1 large egg
  • 1/3 c. vegetable oil
  • 1/4 c. water
  • 1 tsp. coconut extract
  • 1/2 c. shredded coconut
  • 1/2 c. chopped pecans

Frosting:

  • 3/4 c. sugar
  • 6 tbsp. unsalted butter
  • 1 - 5 oz. can evaporated milk
  • 2 egg yolks room temperature
  • 1 1/3 c. shredded coconut
  • 1 c. chopped pecans

Instructions

For brownies:

  • In a large bowl, combine brownie mix, egg, vegetable oil, water, and coconut extract.
  • Stir until just smooth.
  • Fold in coconut and pecans.
  • Spread into a greased 9x13 pan.
  • Bake at 350 for 20-24 minutes, or until a toothpick inserted near the center comes out clean.
  • Cool on a wire rack while preparing the frosting.

For frosting:

  • In a large saucepan over medium heat, whisk together sugar, butter, evaporated milk, and egg yolks.
  • Cook, stirring consistently, until very bubbly and thickened, about 10-12 minutes.
  • Stir in coconut and pecans.
  • Cook for 2 more minutes.
  • Remove from heat, and spread frosting evenly over the brownies.
  • Cool completely. Slice and serve. Store brownies in the refrigerator.
