Cherry Coke Chocolate Cake

  • 1 c. regular Cherry Coca-Cola or Vanilla Coca-Cola
  • 1/2 c. buttermilk or sour milk
  • 1 c. butter softened
  • 1 3/4 c. sugar
  • 2 large eggs lightly beaten
  • 2 tsp. vanilla
  • 2 c. flour
  • 1/4 c. cocoa powder
  • 1 tsp. baking soda
  • 2 c. mini marshmallows
  • 1 - 10 oz. jar maraschino cherries drained well, chopped


  • 1/2 c. butter
  • 1/3 c. Cherry Coca-Cola
  • 3 tbsp. cocoa
  • 1 lb. powdered sugar
  • 1 tbsp. vanilla


  • 1 c. chopped pecans toasted


For cake:

  1. Combine the Cherry Coca-Cola and buttermilk in a small bowl, and set aside.
  2. In a large mixing bowl, beat butter and sugar.
  3. Gradually add the eggs, beating at low speed.
  4. Combine the flour, cocoa, and baking soda.
  5. Add the flour mixture to the mixing bowl alternately with the Coca-Cola mixture, starting and ending with flour.
  6. Fold in mini marshmallows and maraschino cherries.
  7. Pour into a greased and floured 9x13 inch pan.
  8. Bake at 350 degrees for 30-35 minutes, or until a toothpick inserted near center comes out clean.
  9. (While cake is baking, prepare glaze.)
  10. Allow cake to cool for 10 minutes, then pour the glaze over the hot cake.

For glaze:

  1. In a medium saucepan, bring the butter, Cherry Coca-Cola, and cocoa powder to just a boil. Remove from heat, and whisk in powdered sugar and vanilla.
  2. Pour over the hot cake.
  3. Sprinkle the cake with toasted pecans. Allow to cool completely.
