Cranberry and Pistachio Goat Cheese Truffles
Mini goat cheese balls with cranberries and pistachios.

- 8 oz. goat cheese softened
- 2 tbsp. honey
- 1/2 c. dried cranberries finely diced
- pinch of garlic powder
- pinch of pepper
- 2/3 c. pistachios finely chopped, divided
In a small bowl, mix together goat cheese, honey, cranberries, garlic powder, pepper, and 1/3 c. pistachios.
Roll into 1-inch balls. If the cheese is too soft, you can refrigerate it to firm it up for easier rolling.
Roll the balls into the remaining 1/3 c. pistachios to coat.
Serve with crackers. Enjoy!
