Sweet Potato Cupcakes

Sweet and spicy sweet potato cupcakes with fluffy amaretto and orange buttercream frosting!

Ingredients

For cupcakes:

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. butter softened
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 c. mashed sweet potatoes
  • 1 tsp. vanilla
  • 1/2 tsp. orange extract

For frosting:

  • 1/4 c. butter softened
  • 3 c. powdered sugar
  • 1/4 c. amaretto
  • 1 tsp. orange extract

Instructions

For cupcakes:

  1. Line 24 muffin cups in regular-sized muffin pans with paper baking cups.
  2. In a large bowl, combine flour, baking powder, cinnamon, pumpkin pie spice, baking soda, and salt. Blend well; set aside.
  3. In a large mixing bowl, combine butter and sugar. Beat until light and fluffy.
  4. Add eggs, one at a time, beating on low speed after each addition.
  5. Add sweet potatoes, vanilla, and orange extract, beating until combined.
  6. Add flour mixture to mixing bowl, and beat until just combined.
  7. Divide batter evenly among muffin cups, filling about 2/3 full.
  8. Bake at 350 degrees for about 18-20 minutes, or until tops spring back when lightly touched.
  9. Cool completely on a wire rack.

For frosting:

  1. In a large mixing bowl, combine all ingredients and beat until light and fluffy.
  2. Add powdered sugar or additional amaretto as needed to achieve desired consistency.
  3. Frost cupcakes! Enjoy!
