Easy 5-Ingredient Chewy Cashew Butter Toffee Cookies

A super easy, 5-ingredient, extra chewy cashew butter cookie with toffee chips!

  • 1 c. cashew butter Jif is my favorite
  • 3/4 c. white sugar
  • 1/4 c. packed brown sugar
  • 1 egg
  • 1/2 c. toffee bits


  1. In a large bowl, combine all ingredients; mix well.
  2. Drop by teaspoonfuls onto lightly greased baking sheets.
  3. Flatten slightly with a fork, making a criss-cross pattern.
  4. Sprinkle the tops with sugar.
  5. Bake at 350 degrees for 8-10 minutes, or until edges are golden brown.
  6. Allow to cool on the pan for 1-2 minutes before removing to a wire rack.
  7. Cool completely.
