Pumpkin Honey Butterscotch Muffins

A whole wheat pumpkin muffin oozing with honey and molasses, and butterscotch chips.

Ingredients

  • 2/3 c. honey
  • 1/4 c. molasses
  • 1/4 c. oil
  • 1 egg
  • 1 c. canned pumpkin puree
  • 1 1/3 c. white whole wheat whole wheat flour, or all-purpose flour
  • 1 tsp. baking soda
  • pinch of salt
  • 1 c. butterscotch chips

Instructions

  1. In a large bowl, combine honey, molasses, oil, egg, and pumpkin until well-combined.
  2. In a small bowl, combine flour, baking soda, and salt.
  3. Add dry ingredients into wet ingredients and mix until just combined.
  4. Fold in butterscotch chips.
  5. Lightly grease a 12-cup muffin pan, and fill muffin cups 2/3 full.
  6. Bake at 350 for 20-22 minutes.
  7. Cool for 20 minutes before removing from pan. Enjoy!
