Ingredients

For Apple Bars:

  • 1 1/4 cups packed brown sugar
  • 1/2 cup butter melted
  • 1/2 cup pure maple syrup
  • 2 tsp. vanilla
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. apple pie spice
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 3 cups chopped, peeled Granny Smith or Gala apples or your favorite baking apple

For Maple Glaze:

  • 1/4 cup butter
  • 1/2 cup pure maple syrup
  • 1/2 cup packed brown sugar
  • 1/2 tsp. vanilla

Instructions

For Apple Bars:

  • Line a 13x9-inch pan with foil or parchment paper, letting the sides extend over the edges.
  • Lightly coat with non-stick spray.
  • In a large bowl, beat the butter and brown sugar.
  • Beat in maple syrup, vanilla, and eggs.
  • In a medium bowl, combine flour, cinnamon, apple pie spice, salt, and baking soda.
  • Add the dry ingredients to the mixing bowl, and beat until just combined.
  • Fold in chopped apples.
  • Spread batter into prepared pan.
  • Bake at 350 degrees for 25-30 minutes, or until the edges are golden, and a toothpick inserted near the center comes out mostly clean, with a few moist crumbs.
  • Remove from heat to a wire rack to cool.

For Maple Glaze:

  • Meanwhile, in a small saucepan over medium heat, melt the butter.
  • Add maple syrup and brown sugar.
  • Bring to a simmer, and cook for 4-5 minutes, or until glaze is slightly thickened and reduced.
  • Remove from heat, and add vanilla.
  • Pour glaze evenly over blondies.
  • Cool completely. Cut into bars.
