Chocolate Irish Cream Pie

  • 1 unbaked prepared pie shell
  • 7 oz. jar marshmallow fluff
  • 2 cups semi-sweet chocolate chips
  • 6 tbsp. butter
  • 2 tbsp. strongly brewed coffee or 1 shot espresso
  • 1/3 cup + 2 tbsp. Irish Cream liqueur (I used Bailey's) divided
  • 2 tsp. vanilla extract
  • 16 oz. whipped topping thawed
  • chocolate curls optional garnish


  1. Line pie shell with foil or parchment paper, and fill with pie weights.

  2. Bake at 450 degrees for 10-12 minutes, or until edges are golden.

  3. Remove from heat, carefully remove pie weights and foil, and cool completely. 

  4. Meanwhile, in a large saucepan over low heat, combine marshmallow fluff, chocolate chips, butter, and coffee. 

  5. Cook and stir until chocolate is melted, and the mixture is smooth.

  6. Whisk in 1/3 cup Irish cream, and vanilla extract.

  7. Remove from heat, and cool completely.

  8. Fold in 8 oz. whipped topping.

  9. Spread mixture evenly into prepared crust.

  10. In a large bowl, fold remaining 8 oz. whipped topping with remaining 2 tbsp. Irish cream.

  11. Spread over chocolate filling.

  12. Garnish with chocolate curls.

  13. Chill for at least 1 hour before serving.

  14. Cut and serve. Store in refrigerator.
