No Bake Double Layer Chocolate Creme de Menthe Pie! A creamy, silky, light, mousse-y, but rich, spiked chocolate mint pie!

Ingredients

  • 1 prepared chocolate cookie crust
  • 7 oz. jar marshmallow fluff
  • 2 cups semi-sweet chocolate chips
  • 6 tbsp. butter
  • 2 tbsp. strongly brewed coffee or 1 shot espresso
  • 1/4 cup + 2 tbsp. creme de menthe
  • 2 tbsp. creme de cacao
  • 16 oz. whipped topping thawed
  • 2-3 drops green food coloring optional
  • chocolate curls optional garnish

Instructions

  • In a large saucepan over low heat, combine marshmallow fluff, chocolate chips, butter, and coffee. 
  • Cook and stir until chocolate is melted, and the mixture is smooth.
  • Whisk in 1/4 cup creme de menthe, and the creme de cacao.
  • Remove from heat, and cool completely.
  • Fold in 8 oz. whipped topping.
  • Spread mixture evenly into prepared crust.
  • In a large bowl, fold remaining 8 oz. whipped topping with remaining 2 tbsp. creme de menthe, and the green food coloring.
  • Spread over chocolate filling.
  • Garnish with chocolate curls.
  • Chill for at least 1 hour before serving.
  • Cut and serve. Store in refrigerator.
