Cranberry Walnut Trail Mix Cookies

Ingredients

  • 1 cup old-fashioned oats
  • 1 cup oat flour
  • 1/4 cup packed brown sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • pinch of salt
  • 2 large ripe bananas mashed
  • 2 large eggs
  • 1/2 cup peanut butter melted
  • 2 tsp. vanilla
  • 1 cup chopped walnuts
  • 1 cup dried sweetened cranberries
  • 1 cup Grape Nuts Trail Mix Crunch

Instructions

  • In a large bowl, whisk together oats, oat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • In a medium bowl, whisk together mashed bananas, eggs, peanut butter, and vanilla.
  • Add the wet ingredients to the dry ingredients, and stir until just combined.
  • Fold in the walnuts, cranberries, and Grape Nuts Trail Mix Crunch.
  • Drop by golf ball-sized scoops onto parchment paper or silicone mat-lined baking sheets.
  • Bake at 350 degrees for 12-15 minutes, or until cookies are lightly browned.
  • Remove to wire racks to cool.
  • Store in a cool, airtight container.

Notes

  1. These are great warm from the oven, but also at room temperature, and even refrigerated.
  2. Whole wheat flour or all-purpose flour can be substituted for oat flour.
