Greek Meatloaf with Tzatziki Sauce

Ingredients

For Greek Turkey Meatloaf:

  • 1 lb. ground turkey breast
  • 1 lb. ground turkey
  • 12 oz. crumbled feta cheese
  • 1 whole egg + 2 whites
  • 2/3 c. oats
  • 1/2 c. chopped fresh mint
  • 1 large onion finely chopped
  • 3 cloves garlic peeled, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

For Tzatziki Sauce:

  • 8 oz. plain non-fat Greek yogurt
  • 1/2 c. diced peeled cucumber
  • juice of 2 lemons
  • 1/4 c. chopped fresh dill
  • 1 clove garlic
  • 1/4 tsp. salt
  • pinch of pepper

Instructions

For Greek Turkey Meatloaf:

  • In a large bowl, combine turkey breast, turkey, feta, eggs, oats, mint, onion, garlic, salt, and pepper.
  • Using your hands, mix gently.
  • On a large baking sheet, form a loaf, about 10x6x3.
  • Bake at 350 degrees for 40-45 minutes, or until a meat thermometer reads 165 degrees.
  • Meanwhile, prepare tzatziki sauce.
  • When meatloaf is done, remove from heat, and cool for 10 minutes.

For Tzatziki Sauce:

  • In a food processor, combine Greek yogurt, cucumber, lemon juice, dill, garlic, salt, and pepper.
  • Pulse until blended and smooth.
  • Serve meatloaf with tzatziki sauce.
