Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 2 eggs
  • 2/3 c. buttermilk
  • 3/4 c. canned pumpkin puree
  • 3 tbsp. unsalted butter melted
  • 3/4 c. cinnamon chips
  • 4 oz. cream cheese softened
  • 1/4 c. maple syrup
  • 1/4 c. powdered sugar
  • 3-4 tbsp. milk

Instructions

  • Coat regular-sized donut pans with cooking spray. (Regular-sized donut pans typically contain 6 cups.)
  • In a large bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, and cinnamon.
  • In another large bowl, whisk together eggs, buttermilk, pumpkin puree, and butter.
  • Add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in the cinnamon chips.
  • Pour batter into a gallon-sized plastic bag, and snip off the corner of the bag.
  • Pipe the batter into the baking pans, filling each donut cup about 3/4 full.
  • Bake at 350 degrees for 15-18 minutes, or until a toothpick comes out clean.
  • Allow to cool for 5 minutes, then flip the pans over and tap the donuts out onto a wire rack.
  • In a small mixing bowl, combine cream cheese, maple syrup, and powdered sugar.
  • Beat until smooth, adding milk as needed to achieve desired consistency. The glaze shouldn't be too thin that it will run off the donut, but not too thick that the donut can't be dunked.
  • To glaze the donut, dunk it into the bowl, and allow the excess to drip off.
  • Allow the glaze to set for 3-5 minutes, and enjoy!
