Cherry Coke Chocolate Cake

Ingredients

Cake:

  • 1 c. regular Cherry Coca-Cola or Vanilla Coca-Cola
  • 1/2 c. buttermilk or sour milk
  • 1 c. butter softened
  • 1 3/4 c. sugar
  • 2 large eggs lightly beaten
  • 2 tsp. vanilla
  • 2 c. flour
  • 1/4 c. cocoa powder
  • 1 tsp. baking soda
  • 2 c. mini marshmallows
  • 1 - 10 oz. jar maraschino cherries drained well, chopped

Glaze:

  • 1/2 c. butter
  • 1/3 c. Cherry Coca-Cola
  • 3 tbsp. cocoa
  • 1 lb. powdered sugar
  • 1 tbsp. vanilla

Garnish:

  • 1 c. chopped pecans toasted

Instructions

For cake:

  • Combine the Cherry Coca-Cola and buttermilk in a small bowl, and set aside.
  • In a large mixing bowl, beat butter and sugar.
  • Gradually add the eggs, beating at low speed.
  • Combine the flour, cocoa, and baking soda.
  • Add the flour mixture to the mixing bowl alternately with the Coca-Cola mixture, starting and ending with flour.
  • Fold in mini marshmallows and maraschino cherries.
  • Pour into a greased and floured 9x13 inch pan.
  • Bake at 350 degrees for 30-35 minutes, or until a toothpick inserted near center comes out clean.
  • (While cake is baking, prepare glaze.)
  • Allow cake to cool for 10 minutes, then pour the glaze over the hot cake.

For glaze:

  • In a medium saucepan, bring the butter, Cherry Coca-Cola, and cocoa powder to just a boil. Remove from heat, and whisk in powdered sugar and vanilla.
  • Pour over the hot cake.
  • Sprinkle the cake with toasted pecans. Allow to cool completely.
