  • 9-inch prepared pie crust unbaked
  • 4 oz. white baking chocolate must be baking chocolate
  • 1/4 cup butter
  • 1 1/2 cup brown sugar
  • 1 cup light corn syrup
  • 4 large eggs
  • 2 tsp. vanilla
  • 1 1/2 cup pecan halves
  • 1/2 cup white chocolate chips

  1. Arrange pie crust in a 9-inch pie plate. Crimp or scallop the edges.

  2. In a small microwave-safe bowl, heat the white baking chocolate and butter at 20-second intervals until melted and smooth. Do not heat at longer intervals or you risk scorching the chocolate!

  4. Add the melted white chocolate mixture to the corn syrup mixture, and whisk to combine.

  5. Fold in pecan halves, white chocolate chips, and fresh cranberries.

  6. Pour into prepared pie shell.

  7. Bake at 350 degrees for 45-50 minutes, or until edges are golden and the center appears set.

  8. Remove to a wire rack to cool completely.

  9. Chill thoroughly before cutting and serving.
