Ingredients
2c.all-purpose flour
3/4tsp.baking soda
1/2tsp.baking powder
1/2tsp.salt
1c.sugar
1/2c.canola oil
2large eggs
2tsp.vanilla
1/2c.buttermilk
3large bananasmashed
1heaping cup fresh or frozen blueberries
1/2c.walnutsoptional
Instructions
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In a large bowl, whisk together sugar, oil, eggs, and vanilla.
Alternately add the dry ingredients and the buttermilk to the wet ingredients.
Fold in the mashed bananas, blueberries, and walnuts.
Pour batter into a well-greased 9x5-inch loaf pan.
Bake at 325 for 50-60 minutes, or until a toothpick inserted near the center comes out clean.
Let bread cool in the pan for 10 minutes.
Then remove from pan to a wire rack to cool completely.
