German Chocolate Brownies
Fudgy, chocolate chunk brownies with a generous layer of coconut-pecan frosting!

Brownies:
- 1 box brownie mix with chocolate chunks
- 1 large egg
- 1/3 c. vegetable oil
- 1/4 c. water
- 1 tsp. coconut extract
- 1/2 c. shredded coconut
- 1/2 c. chopped pecans
Frosting:
- 3/4 c. sugar
- 6 tbsp. unsalted butter
- 1 - 5 oz. can evaporated milk
- 2 egg yolks room temperature
- 1 1/3 c. shredded coconut
- 1 c. chopped pecans
For brownies:
In a large bowl, combine brownie mix, egg, vegetable oil, water, and coconut extract.
Stir until just smooth.
Fold in coconut and pecans.
Spread into a greased 9x13 pan.
Bake at 350 for 20-24 minutes, or until a toothpick inserted near the center comes out clean.
Cool on a wire rack while preparing the frosting.
For frosting:
In a large saucepan over medium heat, whisk together sugar, butter, evaporated milk, and egg yolks.
Cook, stirring consistently, until very bubbly and thickened, about 10-12 minutes.
Stir in coconut and pecans.
Cook for 2 more minutes.
Remove from heat, and spread frosting evenly over the brownies.
Cool completely. Slice and serve. Store brownies in the refrigerator.
