No Bake Double Layer Chocolate Creme de Menthe Pie! A creamy, silky, light, mousse-y, but rich, spiked chocolate mint pie!

- 1 prepared chocolate cookie crust
- 7 oz. jar marshmallow fluff
- 2 cups semi-sweet chocolate chips
- 6 tbsp. butter
- 2 tbsp. strongly brewed coffee or 1 shot espresso
- 1/4 cup + 2 tbsp. creme de menthe
- 2 tbsp. creme de cacao
- 16 oz. whipped topping thawed
- 2-3 drops green food coloring optional
- chocolate curls optional garnish
In a large saucepan over low heat, combine marshmallow fluff, chocolate chips, butter, and coffee.
Cook and stir until chocolate is melted, and the mixture is smooth.
Whisk in 1/4 cup creme de menthe, and the creme de cacao.
Remove from heat, and cool completely.
Fold in 8 oz. whipped topping.
Spread mixture evenly into prepared crust.
In a large bowl, fold remaining 8 oz. whipped topping with remaining 2 tbsp. creme de menthe, and the green food coloring.
Spread over chocolate filling.
Garnish with chocolate curls.
Chill for at least 1 hour before serving.
Cut and serve. Store in refrigerator.
