Ultimate Fudgy S'mores Brownies

The fudgiest homemade brownie I've ever made tops a thick, buttery graham cracker crust, and a layer of melted marshmallows!

Ingredients

For graham cracker crust:

  • 2 c. graham cracker crumbs
  • 6 tbsp. butter melted
  • 3 tbsp. sugar

For brownie layer:

  • 1 c. butter melted
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 4 eggs
  • 1 1/4 c. cocoa powder
  • 1/2 c. flour

For marshmallow topping:

  • 2 c. mini marshmallows

Instructions

For graham cracker crust:

  • Line a 9-inch square pan with foil, allowing it to hang over the edges.
  • In a medium bowl, combine graham cracker crumbs, butter, and sugar.
  • Press into the bottom of the pan.
  • Bake at 350 degrees for 7-8 minutes, or until golden.

For brownie layer:

  • In a large bowl, whisk together melted butter, sugar, vanilla, and salt.
  • Add the eggs, one at a time, whisking well after each addition.
  • Stir in the cocoa powder and flour, mixing until just blended.
  • Pour the brownie batter over the graham cracker crust.
  • Bake at 350 degrees for 40-45 minutes, or until a toothpick inserted near the center comes out mostly clean, with a few moist crumbs.

For marshmallow topping:

  • Turn the oven to broil on high.
  • Scatter the hot brownies with mini marshmallows.
  • Broil until golden, only about 1 minute. WATCH CLOSELY. Only takes about 1 minute, that's it!
  • Cool in the pan on a wire rack before cutting into squares.
