Don’t ask me about the inspiration for these Funfetti Cake Batter Rice Krispie Treats. I first made them so long ago that I don’t recall! But does a person ever really need inspiration to add cake mix or sprinkles to anything? I must’ve just thought that this was a fun idea, and like, how could it not be good?
I’m thinking that the idea for these Funfetti Cake Batter Rice Krispie Treats was partially born out of these Red Velvet Rice Krispie Treats. Those also include cake mix. Yes, just throw half a box (or so) of cake mix into classic Rice Krispie Treats, and you’ve got a whole new taste adventure awaiting you.
I learned this myself not too long ago, and it was quite an amazing discovery.
But it’s not just that these Funfetti Cake Batter Rice Krispie Treats include cake mix and sprinkles, they’re also just a greatly improved Rice Krispie Treat recipe.
More Rice Krispies cereal so you get a thicker bar. Waaaaay more marshmallows, and even a little more butter. A touch of vanilla is such a simple, but impactful enhancement too. These are much more ooey-gooey and buttery than traditional Rice Krispie Treats.
They require a few extra ingredients than a classic Rice Krispie Treat, but just a few, and they’re still as easy to make. You can prep these in minutes!

My Mom’s Chocolate Scotcheroos are kinda like RKTs too.
I’ve made that Scotcheroos recipe with extra PB in these Peanut Butter Scotcheroos, and then I also made them with white chocolate.
Funfetti Cake Batter Rice Krispie Treats
Ingredients
- 1/2 cup butter
- 1 tsp. vanilla
- 16 oz. mini marshmallows
- 1 cup white or yellow cake mix
- 8 cups Rice Krispies cereal
- 2/3 cup sprinkles divided
- 12 oz. package white chocolate chips
- 1 tbsp. shortening
Instructions
- In a large pot over medium-low heat, melt the butter.
- Add vanilla and marshmallows, and continue cooking and stirring until marshmallows are mostly melted and smooth.
- Stir in cake mix.
- Stir in Rice Krispies.
- Fold in 1/2 cup sprinkles. Do not overmix - colors will start to muddy if you stir the sprinkles too much! Just fold them in quickly, and don't overmix!
- Press mixture evenly into the bottom of a lightly buttered 13x9-inch pan.
- Allow to set.
- In a small saucepan over low heat, combine the white chocolate chips and shortening.
- Cook and stir until melted and smooth.
- Spread in an even layer over the Rice Krispies mixture.
- Sprinkle with remaining sprinkles.
- Allow to set. Cut into bars.

I assume that’s AFTER egg has been added to it. I’ve never heard that about unbaked cake batter mix. If you’re uncomfortable with it, then I wouldn’t do it. Thanks!

These look delicious! I’m going to try and make for my friend’s birthday. Do you think the actual funfetti cake mix would work in this recipe? I saw in notes it said white or yellow cake mix. Also, I know you can typically use butter or margarine as a replacement for shortening; have you ever used either of these? Thank you!

Hi! You could use 1 tbsp. or butter instead of the shortening, and that should be no problem. It’s best with shortening, canola oil, vegetable oil, or even coconut oil as a thinner for the chocolate, but butter will work too. I don’t know why I didn’t use Funfetti cake mix, but I think it was because I wanted to make sure that it was an easy-to-find box mix, and I knew that vanilla/yellow would always be easy to locate at grocery stores. My other concern might’ve been that the colorants in the Funfetti mix would dissolve more easily and turn it into a muddy color. I felt like adding sprinkles myself and stirring them in quickly would give me control over how the sprinkles looked, know what I mean? But I think Funfetti cake mix will be okay!!

Yes, I believe someone else left that comment recently too, and in all my years of baking, I’d actually never heard that! I know there are many eggless raw cookie dough recipes with unbaked flour… I don’t know how to get around it. If you are not comfortable with it, I suppose I’d skip this recipe. I will try to tweak recipes around that problem in the future. Thanks for your comment!!

Two questions/comments:
1) Do you think instead of the shortening/chocolate chips step, I can substitute with some regular frosting?
2) For those worried about the “raw” cake mix, I’m sure you can bake half a cake (or the whole thing and just use half) and then add it in.

Yes! You could definitely use regular frosting! I love that idea, and I think that would be delicious. You know, I never thought about baking the cake and adding the crumbs or something — that’s an interesting idea. Thanks for sharing that tip, that may work for some of the concerned folks.
As it happens, I have another ‘birthday cake’ recipe coming up soon that uses unbaked cake mix. Oh, well!! They can skip it. 🙂

For those worried about the uncooked flour issue, you can put the cake mix onto a plate and microwave in 15 second intervals for about a minute and a half, mixing each time. This effectively kills the bacteria!
