Healthy breakfast cookies that you can indulge in without feeling guilty! These Chunky Monkey Cookies are hearty and filling, but also a little indulgent. With peanut butter, bananas, oats, walnuts, and a bit of chocolate!
Happy Sunday! If only it were happier! I’m sitting here working on my taxes on this beautiful Sunday morning, and kicking myself that I procrastinated so badly on this task. Why did I do this to myself??
I vowed to be on top of this in 2017, but here I am spending a good few hours adding up receipts. FUN.
I’m also shopping for a laptop today. To clarify, I’ve been shopping for a laptop for months. The PC market is so overwhelming and I get lost in all the options. Plus, I’m afraid to spend a big chunk of money on a laptop and find that I hate it or that it’s buggy. I’m considering a MacBook, but they are bonkers expensive, and I have never used a Mac. Talk to me – how hard is it to learn?
I’ve taught myself so many software programs for blogging that I can probably handle one more new system, right?? Also, do you LOVE your Mac? They’re not nearly as overwhelming to shop for since Apple keeps their product line pretty tight, and you can generally expect durability and reliability with a Mac, yes? I would love advice!
So cookies. Chunky Monkey Cookies are making my Sunday. Despite doing taxes and laptop shopping, I’m on my third Nespresso (in love with our machine!), and I am eating Chunky Monkey Cookies for breakfast. I don’t have a right to complain. Damn.
They are breakfast cookies though, so I can still have a cookie in the morning as a meal, and it’s not a bad thing. It’s kind of a healthy thing. Breakfast cookies are the best invention ever.
I loosely based this recipe from How Sweet Eats cookbook Seriously Delish, and I definitely recommend that book. The writing is engaging, and Jessica’s foodie taste is so spot-on. I’ve used her breakfast cookie recipe for a few years now, and I adapt it pretty significantly.
These Chunky Monkey Cookies are skinny and better for you. The base of these cookies is old-fashioned oats and oat flour. Does not get much healthier than that. They’ve got a little brown sugar, cinnamon for spice, peanut butter to hold them together (and for healthy fats), and then lots of ripe banana. A little of everything, and all healthy.
They’re super dense and hearty. They will definitely stick to your ribs, and keep you full all morning! You can whip up a batch in under 30 minutes, start-to-finish.
For this version of Chunky Monkey Cookies, I threw in walnuts for crunch, and chunks of semi-sweet chocolate. With so much healthy stuff, a little chocolate won’t kill ya. The chocolate is the one indulgent piece for an otherwise healthy cookie. But for being healthy, aren’t they so much more splurgy?? Don’t you love that we can eat these for breakfast and they’re guilt-free? Enjoy these with this super popular Almond Coconut Mocha Protein Smoothie, and your healthy breakfast is totally complete!
Chunky Monkey Cookies
Ingredients
- 1 1/2 c. old-fashioned oats
- 1 c. oat flour
- 1/4 c. packed brown sugar
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- pinch of salt
- 2 large ripe bananas mashed
- 1 egg
- 1/4 c. peanut butter melted
- 2 tsp. vanilla
- 1/2 c. chopped walnuts
- 1/2 c. semi-sweet chocolate chunks
Instructions
- In a large bowl, whisk together oats, oat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In a medium bowl, whisk together mashed bananas, egg, peanut butter, and vanilla.
- Add the wet ingredients to the dry ingredients, and stir until just combined.
- Fold in the walnuts and chocolate chunks.
- Drop by golf ball-sized scoops onto parchment paper-lined baking sheets.
- Bake at 350 degrees for 12-15 minutes, or until cookies are lightly browned.
- Remove to wire racks to cool.
- These are great warm from the oven, but also at room temperature, and even refrigerated.
- Store in a cool, airtight container.

I got my MacBook Pro yesterday, and I’m obsessed with it so far!!! I used my work Dell for a few minutes, and it was like going from driving an automatic to a stick shift. Haha. 🙂

Go MAC, you’ll never go back. They are easy to use and I don’t half the problems I use to with a pc. We switched many years ago.
