I love nut pie recipes for the holidays, regardless of the type of nut! Why should only pecan pie get all the love?
I adore pecan pie, but I also found this Cashew Pie recipe about 15 years ago, and it opened my eyes to the possibility of other nut pies. Until discovering that pie, I’m not sure it occurred to me that I could make a nut pie with ANY kind of nut. Why just pecans? Why not cashews? Or walnuts? Or hazelnuts? Or even peanuts?
I haven’t done that yet…. peanuts. That might be going too far. After all, Peanut Butter Pie probably gets us close enough.
But I’ve since leaned into this concept, and created additional cashew pie recipes, along with a lone hazelnut pie and a few walnut pie recipes.
If you want to try an unconventional and special version of a nut pie, this Coconut Cashew Pie is one to look closely at.
Any Trader Joe’s fans out there?? You are probably familiar with their amazing trail mix selection. As well as a general plethora of fancy, fun nuts. Their coconut cashews are positively addicting!
This pie was obviously inspired by TJ’s coconut cashews. What a combo! Cashews (the best nut!), a thin coat of honey, and sweet coconut, altogether give a delightful tastebud experience. Ha.
A recipe for Coconut Cashew Pie only made too much sense when I already have a fabulous Cashew Pie recipe, and knowing what a hit it is to pair coconut and cashews together. Thank you, TJ’s.
It’s got all the amazing qualities of a sticky-sweet, ooey-gooey, butter-kissed nut pie, but with cashews, of course, a mess of coconut, and an extra twist: honey.
So many nut pies are a combination of brown sugar and light or dark corn syrup, or both. You could certainly use one of those types of pies if you’d like, swapping cashews.
But while this Coconut Cashew Pie includes a bit of corn syrup, the base is almost all honey and butter. It’s so unique. The honey comes through potently, but it doesn’t overshadow the other ingredients — the cashews and coconut still shine through.
This Coconut Cashew Pie is similar to classic pecan pie in texture – a flaky crust, a layer of gooey goodness, and crunchy nuts.
It’s just built from honey, cashews, and coconut instead of the usual pecan pie suspects!
It doesn’t require a lengthy list of ingredients, they’re all easy-to-find and accessible, and it’s quick-to-prep. This Coconut Cashew Pie is worthy of making your recipe short-list this holiday season!

Coconut Cashew Pie
Ingredients
- 1 9-inch prepared refrigerated pie crust or your favorite crust, prepared
- 1 cup honey
- 1/2 cup light corn syrup
- 1/4 cup salted butter cut into cubes
- 2 tsp. vanilla extract
- 3 large eggs
- 2 cups roasted salted whole cashews halves & pieces are also fine
- 1 cup shredded coconut
Instructions
- Arrange pie crust in a 9-inch pie plate, and crimp or scallop the edges.
- In a small saucepan over medium heat, bring honey and corn syrup to a boil.
- Remove from heat, and cool for 10 minutes.
- Whisk in the butter and vanilla.
- Whisk in the eggs, taking care that they don't scramble.
- Stir in the cashews and coconut.
- Pour into prepared pie crust.
- Bake at 350 for 40-45 minutes, or until edges are golden brown, and the center appears set.
- Remove from heat, and cool completely on a wire rack.
- Cut and serve.

Oh, I’m sorry, I really don’t know how to do that! I don’t do much keto baking, and I’d think that would be extra difficult with a heavily sugar-based/syrup recipe. I wish I could help, but I’m not that familiar with keto baking, unfortunately!
